Spiced pomegranate mojito 

This tropical drink gets a winter transformation with spiced rum and seasonal pomegranates

This long, refreshing drink is a twist on the Cuban classic, ideal for helping wintry parties to go with a bang. This recipe is perfect when served as an aperitif with some Christmas canapés.

Ingredients

45ml spiced rum (or fiery ginger beer for a non-alcoholic version)
2 tsp grenadine
Pomegranate juice
Soda water
½ tsp granulated sugar
Pomegranate seeds
Small handful fresh mint leaves
Small handful fresh mint leaves
  1. Method

    Step 1

    In a jar or small jug, crush the lime juice, mint leaves and sugar with a large wooden spoon or the end of a rolling pin

    Step 2

    Pour the mixture into a tall glass and add 1 tbsp of pomegranate seeds and the grenadine. Stir well

    Step 3

    Fill the glass ⅔ of the way with ice cubes and pour over the shot of rum.

    Step 4

    Top with pomegranate juice and soda water, and garnish with fresh mint leaves
