Irish Cream Alexander
You’re at the end of a long meal. The food was wicked and the craic has been mighty. A primeval instinct is telling you that you need something sweet in your belly but you’re about to burst from all the overeating. This is where the trusty dessert cocktail comes into its own. Not only will it satisfy your sugar cravings, but it will put a wee pep in your step too. This one here is a twist on the classic brandy Alexander.

Step 1
Chill a coupe or martini glass with ice. Put the Coole Swan, rum and fresh cream in a 500ml Kilner jar with some ice. Seal the jar and shake it hard for 20 seconds. Strain into the chilled glass and garnish with some freshly grated nutmeg.
Step 2
If you’re having a dinner party and want to serve your guests one of these for dessert, you can prep it in advance by multiplying the amounts here by the number of guests you’re having. Just pour all the ingredients into a clean 1-litre swing-top bottle, then when you’re ready to rock, give it a shake before you mix it up in a Kilner jar as above.
