Air fryer blueberry cheesecake toast
This healthier take on French toast is a perfect way to start the day, and it's incredibly easy to whip up in an air fryer

4 slices brioche loaf (you can also use normal bread, vegan or gluten free varieties)
50g fresh blueberries
1 egg (for a vegan recipe, replace with 2 tsp cornflour)
1 tbsp cream cheese (non-dairy if preferred)
½ cup plain yoghurt (oat/soy/almond/dairy)
1 tsp vanilla essence
1 tsp maple syrup
Icing sugar
Method
Step 1
Lay out the bread slices on a board and use the bottom of a glass to flatten the soft inner crumb, leaving about a centimetre of the crust raised.
Step 2
Whisk the egg in a bowl and add the yoghurt, cream cheese, vanilla and maple syrup. Continue to whisk until smooth and thick. If you are using cornflour, make sure to whisk until free of lumps.
Step 3
Carefully pour or ladle the creamy mixture into the wells you have made in the bread. Add the blueberries to the top, whole or chopped.
Step 4
Carefully transfer the slices to your air fryer tray and cook at 190 C for 10 minutes.
Step 5
Remove from tray and leave to cool for 1-2 minutes. Sprinkle with icing sugar and enjoy.
